You may also add chicken if you like.
1 tbsp curry paste
1 can of coconut milk
1 whole cauliflower
1 red pepper
1 clove garlic
Juice of half a lime
Salt and pepper
Cut the peppers into cubes, chop the onion and the garlic. Grate the carrots and cut into slices. And cut the cauliflower into florets.
Heat the oil in a large pan add the onion and garlic when the onion is a bit glazy than add the curry paste. If necessary, add a little more oil if the paste looks a bit dry.
Add the chopped vegetables and fry briefly.
Add the coconut milk and the juice of the lime.
Leave the curry on a low heat for about 18 minutes until done
Put some salt and pepper to taste. top with fresh coriander.
Serve with rice, noodles or flat bread.
