Fried Rice with fried egg

The weather was so nice today that I did not have much desire to stand for a long time in the kitchen.
So I made this quick and easy dish.

Fried Rice with fried egg

Simple and very quick to make
Serves 4

400g basmati rice
3 tbsp sunflower oil
2 onions, chopped
1 bag of soup vegetables (600 g)
2 tsp sambal oelek
6 tbsp soy sauce
4 eggs


1. Boil the rice according to package directions. Rinse cold in a sieve and leave to cool.
2. Meanwhile, heat 2 tbsp oil in a wok and fry the onion 2 minutes Add the soup vegetables and chili paste and stir-fry for 3-4 minutes Add the soy sauce and rice and heat 5 minutes on medium heat. Stirring regularly.
3. Meanwhile, heat 1 tbsp oil in a frying pan and fry the eggs. Sprinkle with salt.

4. Spoon the fried rice into 4 bowls and top with 1 fried egg.
5. Garnish with cucumber and roasted red pepper.
